Ingredients:
- 4 skinless, boneless chicken breasts
- 1 lemon
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 teaspoon chopped fresh thyme
- salt and pepper to taste
Directions:
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels and place them in a baking dish.
- In a small bowl, mix together the minced garlic, olive oil, chopped parsley, basil, and thyme.
- Grate the zest of the lemon into the bowl with the herb mixture, then squeeze the lemon juice over the chicken breasts.
- Season the chicken with salt and pepper, then spread the herb mixture over the top of the chicken breasts.
- Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Serve the chicken hot, garnished with additional lemon wedges and chopped herbs if desired. Enjoy!
