Lemon and Herb Baked Chicken


  • 4 skinless, boneless chicken breasts
  • 1 lemon
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon chopped fresh thyme
  • salt and pepper to taste


  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels and place them in a baking dish.
  3. In a small bowl, mix together the minced garlic, olive oil, chopped parsley, basil, and thyme.
  4. Grate the zest of the lemon into the bowl with the herb mixture, then squeeze the lemon juice over the chicken breasts.
  5. Season the chicken with salt and pepper, then spread the herb mixture over the top of the chicken breasts.
  6. Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Serve the chicken hot, garnished with additional lemon wedges and chopped herbs if desired. Enjoy!
